When I try to install SuSE pro 7.3, I use the default video mode (640x480) and all is well until the first reboot. The kernel loads and you see all of the driver messages. Then it appears that it is trying to start X to continue
installation. The system dies a horrible death here and I have to cycle
Don't know if it's any use but I can tell you that SuSE V7.1 goes into an
apparent freeze, (well, cursor at top left hand corner of the screen,
anyway), when booting into graphics mode if you choose a minimal install and
don't choose to install the X stuff at all.
However, on SuSE V7.1 this is got round by simply pressing ALT-F1 which puts
you back to the yast1 version at that point.

One other minor thing for the SuSE folk, on the screen where you create the initial user account, while tabbing through and entering name, username, password and such, the button for suggesting the username gets the default return action and holds it after you tab away from it. When you get done entering all of the fields and hit return, rather than going on to the next page, like I would hope for, it changes the entered username with a new suggested one. Not a real problem, just an inconvenience.
