What I did to remove helix was a:
rpm -qa | grep helix
This will display all of the packages that have helix in the name. GNOME
was kind enough to do that. You should make sure sure you don't need
the package before uninstalling.
Another trick is to go to /opt/gnome or wherever gnome is installed
and type:
rpm -qf
