Of course, stupid me, I meant *stealing* sheep -- an easy confusion nowadays. As to where I heard it, it is from a typographer friend of mine, classically trained, whose teacher always said this.
Hmmm...where did you get that one from? This is the third version of the quote. It was originally attributed to William Goudy (he designed the Goudy typefaces as well as what is now known as Berkeley). The two versions I have heard are:
"Anyone who would letterspace blackletter would steal sheep."
and
"Anyone who would letterspace lowercase would steal sheep."
and I'm not sure which is the original. If you can find a copy, Goudy's book "Typologia" is a good read. There is a fun book titled "Stop Stealing Sheep" about typesetting which has some nice points and examples.
