Well, I would exclude the /proc directory tree as well, since that isn't a 'real' filesystem, it's just an interface to the kernel (sort of). You may also want to exclude the /dev/ directory, but if you're wanting a complete image of the drive, then I wouldn't do it this way at all. You should be safe enough just excluding them, as long as you're not intending to just untar everything to get a running system in event of a failure...
