Having an enthusiastic moderator during the day to keep the workshop ticking over, introduce sessions, point at wiki resources etc is very helpful and need not take a lot of specialist knowledge. We've run a couple of workshop days for the openSUSE KDE community where I've taken both moderator and specialist roles and it's hard work that way.
