I reported this issue as http://bugzilla.novell.com/show_bug.cgi?id=628318, but I think we should talk about it again :) Evince is one of the GNOME core applications (we even demo it in our GNOME Quick Start guide), and thus I think, it should appear along with all the other applications. I know you normally don't want to start it directly, (double-)clicking a PDF file is all what is needed. Or using "Open with" is also fine. But if you want to clean up the Application menu (I'm all for it!), introduce a second level (cf.
