What will work with a single root partition? The default is a single
root partition with /var/lib/docker as extra partition for
openSUSE Kubic.

Will grub be able to boot from btrfs?

openSUSE supports official only one bootloader: grub2. btrfs is
the default filesystem. A default installation uses grub2 with btrfs
as root filesystem without /boot partition. So of course is grub2
able to boot from btrfs, else nobody would be able to install and
boot our distribution ;)

Will a RAID 1 work in this case?

I don't know about the requirements for Raid and bootloaders.
For datapartitions it works for sure.
