You can use ncurses YaST, which is pretty much exactly the same as 'graphical YaST'
I know, but it is quite uncomfortable. Some menus differs, functionality is not the same. Just try it: install a minimal text pattern, then try to upgrade to a working graphical setup, without using any of the patterns (because you do not want one of the major desktops).
