AFAIK, NFS 3 does not have authentication. You just connect if you have the right IP. An intruder to the building, or a visitor, could connect a new machine and get access to the NFS shares. I recogn that I have not looked carefully at NFS 4 features to find out what has changed there, though.
NFSv4 supports kerberos[0] (authentication, albeit a horrid one if you ask me), and idmapd[1], which maps usernames to uid/gid.
