when I run "yast2 lan" I get a popup saying "This configuration is not compatible with NetworkManager. Use nm-settings applet or switch to Traditional Method with ifup" and everything disabled. First of all, I assume that the configuration isn't compatible with _yast2_ and not NetworkManager as the popup says.
It is exactly the way the pop-up says. NetworkManager no longer reads system-wide network settings from /etc/sysconfig and uses its own settings system. That is the reason why everything in yast2-lan UI is disabled if network is managed via NetworkManager (why bother with entering some configuration into YaST when NetworkManager will not use it at the end?) nm-settings applet is an utility to convert sysconfig settings into the format NetworkManager understands. If you opt for NetworkManager during installation, the settings are converted automatically. If you do so in the installed system, you have to do the conversion yourself. If you want to configure network via YaST, please disable NetworkManager.
