It might also be helpful to give them a reasonable sized desktop (e.g. 1024x768) but include a lower resolution mode such as 320x200, which they will be able to switch to with CTRL/ALT/+ to 'zoom in' when necessary.

My suggestion (and Chris, you skimmed on this) is to dramatically increase your "dpi" settings for X when it loads to say something like 100. That way the text size ought to be large.
