You shouldn't have to use fetchmail as Demon automatically tries to push mail on to you via port 25. You just need a correctly configured daemon listening on that port.
I assumed that James' server is not on-line permanently; fetchmail is just used to let DEMON know that it is on-line now. You can use ETRN directly or via a suitable script; I suggest fetchmail as the quickest way to automate it, not the best.
PS you don't have to use sendmail; there are other smtp mta's eg exim, qmail, postfix.
