Never tried to delete default subvolume, I made that mistake in the past on a
different system so would never do it again.
I set a setting that did something like create snapshots every hour (something
like that) and after seeing the result I turned it off and set a setting that
removed them if they were a certain amount old so they would have been removed
by now.
I must admit the part about "hourly" is from memory and it might be a little
different to how I remember.
In any case, how do I fix this? If it's just a matter of pointing to a
non-existent snapshot being the problem, how do I point to the most current
existing snapshot?
