The result of mdadm --zero --metadata=imsm --force /dev/sdb is mdmon: /dev/sdb is not attached to Intel(R) RAID controller. The same is for /dev/sda I hope that helps...
That is telling you (in a somewhat confused way) that it found Intel metadata on the device despite the fact that no Intel controller was found. It should still have erased the metadata, so if you run the command again it will tell you that it didn't find any metadata. When you reboot the RAID should not be started... unless. If you run that command while booted with filesystems mounted on the RAID, then during shutdown md will write out the metadata again - I think. That was why I suggested doing it from a rescue-cdrom or similar. Have you rebooted since running the "mdadm --zero"?
