The gnome-volume-manager keys in question are the ones that set Banshee as the app to open when an ipod is plugged in, etc. So, just setting the mimetype isn't a replacement for that.
AFAIK, it is. x-content/audio-player is a mime type used by gio/nautilus to know what to do when an audio player is plugged in. Unless the ipod doesn't have the right hal keys set, this should work.
Do you happen to know where the pref of which app to open when an ipod is plugged in (or Audio CD inserted) is stored?
