Uyuni follows a rolling release model so (officially) this is not possible. Unofficially, you have the Snapshots that we produce only in case we need to reproduce bugs with the migrations. In this case the Snapshot for 2021.02 is at https://download.opensuse.org/repositories/systemsmanagement:/Uyuni:/ Snapshots:/2021.02/images/repo/Uyuni-Server-POOL-x86_64-Media1/ But keep in mind that if they are any issues with the Snapshots, they are not supported.
