The URL Nicola provided is for clients: "How to unregister a SUSE Manager Client" However it doesn't say it applies to 4.1, so it could be some things are slightly different On openSUSE it should be easy, you could use zypper to for packages with the Uyuni provider. That at least would give you the whole list of packages provided by Uyuni. But that would not remove packages provided by openSUSE such as, for example, salt.
