so let me get this straight copy the contents of /home/* to cd/dvd, copy them onto the server in /home/ ???? and use nfs to automount the home directory on the server -> client as /home/ ??and use nis to authenticate the users

I don't know why you need the CDs. You can copy over any files, via the network. Create all the users on the server, then mount the server's /home on some temporary mount point on each computer and then use cp -a to copy each user's home directory onto their directory on the server. Once you've got that done, you can mount the /home share directly over the existing home directories on the user's computers. All apps should be OK and all your settings & data will be available on all systems.
