If you're otherwise (apart from mounting) not touching the disks in your LVM setup, I see no reason why you should need to do any backups.

Correct. Other than the usual backups you already have of course :) LVM does additionally keep some backup information in ls /etc/lvm/ so if you're particularly paranoid you might want to be sure that you've kept a backup of that from your old system. But I frequently install new operating systems into machines that have LVM and never have any problem in that regard.
