Helix Code are a company that are comitted to Gnome development, and there is essentially no difference between Helix Gnome and 'vanilla' Gnome, they share the same code. With Helix you get handy utilities like their Helix Updater (soon to be replaced by Red Carpet), and the default configuration is slightly different. There should be no difference in the demands it makes on your machine though, or any difference should be negligable... Worth noting is that Miguel de Icaza, who founded the Gnome project also founded Helix Code.
