So, I need a binary editor with excellent find-and-replace capabilities. Any suggestion is welcome.

Emacs, of course! If Mule gets in the way, use `M-x find-file-literally' instead of `M-x find-file' or `C-x C-f'. I used this a few times to patch executable files. You have to be careful to not displace the rest of the bytes, but `M-x overwrite-mode' then helps you at this.
