My USB disks are also mounted in a random order, I guess that's just the way it is...
However, you can give the filesystems a label and then they will always get mounted with that name (here: /media/mylabel ).
I have no entry in fstab for my USB-disks.

Easy. Find out what device node the USB disk is allocated (either /dev/sdb1
or /dev/sdc1), then do tune2fs -L <label> /dev/

I guess it's e2label /dev/xy yourlabel on the unmounted device see: http://lissot.net/partition/ext2fs/tools/e2label.html but I don't know about ext2/3 filesystems, so better google or ask here in a new thread before executing something...
