try it out? usually the first one works, but often the three of them give the same result. Windows 7 uses at least two and often three partitions, that's why there are three entries. The first one is usually a very smalll boot partition. You can edit the /boot/grub/menu.lst file. Simply comment out the lines that do not fit your needs.
