I know I don't need to concern myself with off-topic issues, because this thread is already in another dimension. But I must correct a detail in your otherwise illuminating message, namely that shitakis come only dried. Even now, while I write, there is a basket of fresh (i.e. never dried) shitakis in my refrigerator.
