Assuming we're talking software RAID, it's possible I believe, although I've never done it myself. The idea is basically to setup a RAID1 array with one drive failed/missing. Once you've got the RAID1 running in degraded mode, you hotremove the "failed" drive, then hotadd your second drive, and it should start syncing,
YMMV - I would try this out on a test system first.
