Hum, what is mpd's cpu usage when playing music. Also, uncomment the "log_level" line in /etc/mpd.conf change it to verbose, restart mpd, play some music and post the log.

Restarted mpd, and ran a cpu intensive perl script that does a lot of reading from the same partition that stores all the music files. Playback went well, until gmpc lost its connection to the mpd server (not really the same problem as before).
