Web interface has links for Reply, Reply-all, and Forward. You simply hit reply all and clear any fields you don't want.
Its a bit of a pain.
But you are free to set your Gmail to use Imap, install Thunderbird, and use the reply to list feature. Best of both worlds, free mail storage, synced everywhere and full controls.

I was actually thinking of going the other way and having Google pop my ISP and get all my mail here. I don't know how I handle the reply to in that case though. As in all things Iv'e just got to slow down and think about what I am doing.
