Just create the new IMAP accounts on the email clients and leave the POP account in place, so that the old mail will remain available. If desired, you can move the existing mail from the POP folders to new ones on the IMAP server. Once that's been completed, you can delete the POP accounts from the email clients. Of course, with gmail, the users can also use web mail access, when away from their computers and have all their mail available.
