What's to define? MIME: Multipurpose Internet Mail Extensions. It's ubiquitous these days. Among other things, it includes encodings for non-text content and a format for including multiple discreet parts, including, e.g., multiple equivalent forms of the body text (text and HTML, e.g.), attachments and embedded images. Unfortunately, I don't know the answer to MB's question. My stock and generic answer is to explore all the menus and option / settings / preference dialogs.
