you have a pretty thought computer! my own dualcore is (alas) much slower (and I do video conversion pretty often)
I automated the ripping and transcoding process, putting them in separate scripts. A copy of the scripts are available through here:

The ripping script I wrote runs as root, which isn't the best of ideas, but it does save be from having to keep entering the root password to mount and umount the DVDs.
