Probably the easiest way to do what you want is to use zip. I would suggest that you don't use a single file as most (if not all) programs that do what you want create a new file and then remove the old which means that you need to have enough free space for the largest backup file that you have. I would also advise against using absolute paths as they can make life hard for you later.
