You have to label the filesystem inside the encrypted partition, and possible the partlabel outside. It might be possible to label the partition outside, before encryption, but then it may be overwritten and lost. The external uuid keeps, though. Maybe. I mount them manually, mostly, thus I define the directory where they mount. You need to define entries in fstab and crypttab for each disk (nofail,noauto).
