Activities are work in progress. They aren't fully integrated with the rest of KDE and the part of integration that already exisit has no user interface yet. Look on http://userbase.kde.org/plasma/4.2 . There you can find a hint how to connect activities with desktops one to one. That makes activities at little bit more useable and gives a hint how it shall work in future, but there is much more planned.
