As somebody else said, you can tell a NIC to run at say 10 Mbps.
I'll investigate the "rsize=1, wsize=1" parameters, which I do not know about.
Another thing that will slow NFS down is to restrict the number of daemons on the server. I can't remember exactly how to do it.
