dont use nfs. on the log server, change the line in /etc/rc.config that is like SYSLOGD_PARAMS= to SYSLOGD_PARAMS="-r" then restart syslog. on the clients, put an entry in /etc/syslog.conf like mail.* @logserver.domain.com for all the entries you want to log to the server then restart syslog on the client and thats it. now get a good cron script to rotate you log files on the log server and back them up to a cd or tape frequently. This file is created c.q. writen to by syslogd, which receives the messages from the applications.
Look at 'man syslog.conf' to learn howto send the messages to another machine (hint: @) and look at 'man syslogd' to learn howto accept remote messages (hint: option -r).
I expect it can be done by mounting /var/log over NFS, but how safe/secure would this be? Is there a better way?
Forget NFS. It's not save enough for log messages. Use syslogd, it is installed and you're already using it.
