I can see those in /boot/efi/EFI. And I can see all three as options in efibootmgr
So show output of "efibootmgr -v" to us finally. I think the simplest solution in your case is to chainload Mint shim which is signed by Microsoft and so is guaranteed to pass signature verification, but we need to know how it is called. Output of "ls -lR" /boot/efi would be helpful las well.
But the built-in boot manager will let you pick those directly,
But I only see Windows in this boot menu!!!
