You don't give much detail! What is the configuration of the server and the network? Do you restart the server every day, for example? You need to try to isolate the cause. Is the server itself busy? (try top or other tools). Is the NFS usage heavier? (nfsstat). Is the network itself busy with some other traffic? (wireshark or other network analyser) Do you get slow latency or slow throughput or both?
