Riva128 is fastest, I do believe. However, it is NOT the chip in the Voodoo card, but rather is that chip's greatest rival. The chip in the Voodoo cards is not a "chip" but a chipset called the Voodoo chipset, made by 3dfx. It is a 3D only solution, and I'm not aware that it is supported under Linux. Riva128 is a 2D/3D solution, but I believe only its 2D functions are supported at this time.
ATI has been on of the forerunners in releasing specs to make great Xservers for their cards. I believe they are the most supported out of the any brand (feature wise) with xfree86, but I believe the RIVA128 is the fastest, I could be wrong too, I don't know what is new.
