The problem is that localhost did not appear in hosts, and postfix starts kicking errors for some obscure reason. lo gets assigned 127.0.0.1 regardless of the existence of a line in hosts. That you can use anything in 127.0.0.0/8 to ping your own machine doesn't seem germane to the issue here.
