Putting apps on a panel was much more straightforward in v11.1. I cannot fathom the advantage of the change or what it contributes.
There is a rework of an old KDE3 addon idea that gives you an OSX-like panel that you dock all your common applications in (it also has a button for the regular KDE4 app menu). You can use it to replace the entire traditional KDE applications+panel concept and basically have the same general layout/concept as OSX uses. I've used it on at least one computer, and it works quite well. Maybe this way of working with KDE4 will fit better with your way of working?
