I use SeaMonkey, so can't say. Nevertheless, it calls it "Wrap plain text messages at..." in "Composition" in browser prefs, and "mailnews.wraplength" in about:config, which ought to get you there if nothing else works.
Doesn't exist in Thunderbird. I've been thinking of switching to SeaMonkey.
I won't suggest you don't try SM, but don't let a little thing like this be a straw. If you can't find how to access about:config to change it there, or wherever it's hiding in prefs, shut it down and look in the profile's prefs.js file. If it hasn't been changed to something other than the default (72 IIRC, but maybe 76 or 80), it should be in there, and you can change the number with your your text editor. -- "The wise are known for their understanding, and pleasant words are persuasive."
