I don't use Outlook at all (never have) but a quick look at it seems to indicate that: File ---> Properties --> Details will get you the header for the currently selected email. Doesn't seem to be too tough. (but I agree, it would be much nicer to just make unsubscribing a one click affair right from the email footers.)
