You are confusing yourself. Fetchmail fetches your mail from a mail system and delivers it as you configure to a MDA that you choose, postfix, sendmail, procmail..... which places it into folder/directory structure you define, mbox in your case. Then you read the mail locally with a client that can access the particular structure you designated, mbox.
