Well, it took me a while, but I finally managed to figure out what the problem was: low power. It appears my power supply was just a tad too weak to power up all the devices, and it left me with a slow partition, and the chance of lock-up during heavy CPU activity. I've currently disconnected 2 drives, and the whole system's as stable as it should be. Guess I'd better buy me a better PSU...
