For the desktop icons, at least if you're talking about the ones inside a 'Folder View' widget, you can right click on the background of the widget (plasmoid). Next, click 'Folder Settings', then go to Icons, and under Behaviour uncheck 'Previews' and/or 'Click to view folder'.
