I've been running 64bit/11.0 for a long time. It's very stable. The biggest pain is that the 64bit flashplayer is flakey and run at 100% cpu for no reason. 64bit systems have a flat memory map where 32bit/PAE has to page the RAM in and out of the upper area so it's slightly slower and less efficient.
