Not necessarily. They will log the outgoing transmission on port 25. That is the typical email port used for sending email. If you're worried about security, I'd highly recommend Cotse - www.cotse.net Cotse does not keep any backups whatsoever and have no log of your usage. In addition to secure email, you get http proxy usage, ftp proxy usage and many other services.
