Daniel, I use a combination of ES File Explorer on the phone and Filezilla on my computer.
In ES File Explorer tap the menu button (3 horizontal lines) at top left and then choose Remote Manager. You can then turn on/off an ftp server on the phone, which you can connect to with Filezilla (or another FTP client of your choice).
I use this wirelessly through my router, but I think it will also work through a wired link (not tested).

at least this works over wireless. But as it is ftp (and not sftp) isn't it then very public what I send from PC to phone or vice-versa?
I would prefer it over cable for this reason, but I don't know how to make sure my data flows only thru the cable and is not distributed unencrypted thru the air...

OK, what I suggested doesn't work through cable. However, when I connected my phone by USB to my computer I was able to see it in Dolphin and navigate through the folder tree. I was able to copy a file from the phone to my computer by drag and drop. Didn't try the other way. My phone is an HTC One running Android 5.0.2.
