Passwords normally are encrypted. When you set up a user, you can even choose the encryption method.
2. For files and folders.
I use KDE, so I have no idea about Gnome. Right click on a folder or file Select Actions You'll see your choices. BTW, as others have mentioned, it's your responsibility to learn about things and not just come here with questions that you can answer on your own with a bit of effort. The best way to learn is to read and try. You can even set up test users or systems where you can experiment all you want.
