may be you missed the fact that- pmwiki is very customizable my skin is "triad" http://www.pmwiki.org/wiki/Skins/Triad but there are many: http://www.pmwiki.org/wiki/Skins/Skins and it's pretty easy to customize one. that said, imho, you have two incompatible objectives: be readable or be good looking... You know what I choosed.
Check this site: wikidot.com. Looks pretty good right? Now check its wikis.

I once installed a wordpress instance on my server, quite pretty, but very difficult to manage, always spammed, a nightmare to move from a server to an other one... I gave up.
